Acropolis' Koulourakia

Ingredients
  • 3/4 pound (3 sticks) butter
  • 1 1/4 cup sugar
  • 2 eggs
  • 1/4 cup orange juice
    • (no pulp)

  • 1 teaspoon baking soda
  • Pinch of vanilla
  • 1 shot Cognac (optional)
  • 1 ½ teaspoon baking powder
  • 5 cups sifted flour
Directions
  • Preheat oven to 350˚F, lightly grease a cookie sheet, or use parchment paper.
  • With an electric mixer, cream butter with the sugar until fluffy. Approx. 10 minutes.
  • Slowly add eggs, one at a time. Mix well.
  • Add orange juice and baking soda to the mixture.
  • Then add the vanilla and whiskey to the mixture, blend together.
  • In a separate bowl combine half of the flour and the baking powder together and add to the batter. Mix.
  • Add the remaining flour to the mixture and knead until you have achieved a soft non-sticky dough.
  • At this point, the dough can be refrigerated.
  • Pinch off pieces of dough and roll into pencil thin strips, about 6 inches long. Fold in half and twist into a rope.
  • Place 1 inch apart on an ungreased cookie sheet.
  • Brush the cookies lightly with beaten egg yolks, and if desired, sprinkle with sesame seeds.
  • Bake at 350˚F for approximately about 20-30 minutes or until lightly browned.
  • Store in plastic container in a dry place. .
