Acropolis' Koulourakia
Ingredients
3/4 pound (3 sticks) butter
1 1/4 cup sugar
2 eggs
1/4 cup orange juice
(no pulp)
1 teaspoon baking soda
Pinch of vanilla
1 shot Cognac (optional)
1 ½ teaspoon baking powder
5 cups sifted flour
Directions
Preheat oven to 350˚F, lightly grease a cookie sheet, or use parchment paper.
With an electric mixer, cream butter with the sugar until fluffy. Approx. 10 minutes.
Slowly add eggs, one at a time. Mix well.
Add orange juice and baking soda to the mixture.
Then add the vanilla and whiskey to the mixture, blend together.
In a separate bowl combine half of the flour and the baking powder together and add to the batter. Mix.
Add the remaining flour to the mixture and knead until you have achieved a soft non-sticky dough.
At this point, the dough can be refrigerated.
Pinch off pieces of dough and roll into pencil thin strips, about 6 inches long. Fold in half and twist into a rope.
Place 1 inch apart on an ungreased cookie sheet.
Brush the cookies lightly with beaten egg yolks, and if desired, sprinkle with sesame seeds.
Bake at 350˚F for approximately about 20-30 minutes or until lightly browned.
Store in plastic container in a dry place. .
