Acropolis' Potato Salad

Ingredients
  • 8 sized Red Potatoes

  • 2 Green Onions

  • Handful of Fresh Dill

  • Parssley?

  • Salt and ground pepper

  • 1/2 medium Red onion, thinly sliced

  • Dressing

  • 4 Tbsp. Olive Oil

  • 3 Tbsp. Lemon Juice

Directions
  • Fill a large pot with water and to a boil.

  • Wash and halve your potatoes and cook until fork-tender.

  • In a small bowl whisk together the olive oil, lemon juice.

  • Add the dressing to the saladand mix well.

  • Refrigerate for about 2 hours before serving.
