Aunt Evy’s Prune Cake

I did not have a recipe of Aunt Evy’s to include in this cookbook. However, I did find this recipe she gave to her sister-in-law, Dot Anderson years before. Dot’s daughter Judy submitted it for the Anderson Volume 1 Cookbook, where it received good reviews.

Evelyn Marjorie Anderson 5/17/1906 - 7/4/1999

Aunt Evy was the sixth of seven children born to Emma Ericson Anderson and Carl Anderson. She married Francis Willard Walters, June 30, 1936.
Willard was born 2/22/1904 and died 8/19/1963. He taught Industrial Arts and Aunt Evy was an elementary education teacher.

Ingredients
  • 2½ cup cake flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 1 tsp. allspice
  • ¾ tsp. baking powder
  • ½ cup butter
  • 1 ½ cups sugar
  • 2 eggs, well beaten
  • 1 cup cooked prunes
  • 1 cup sour milk or buttermilk
  • Icing
  • 1 cup sugar
  • Pinch of crème of tartar
  • ½ cup buttermilk
  • 4 T butter
  • ½ tsp. baking soda
  • ½ tsp. vanilla
Directions
  • Pre-heat the oven to 375˚F.
  • Grease a 9x13” cake pan or 2-9” round cake pans.
  • Place the prunes in a sauce pan and cover with water. Bring to a low boil and cook until soft, about 8 minutes. Drain and chop.
  • Combine flour, baking soda, baking powder and spices together, sift three times.
  • Cream the butter thoroughly, gradually adding the sugar and creaming until light and fluffy.
  • Add the eggs and the prunes mixing together.
  • Alternately add small amounts of the dry ingredients and the milk, mixing well after each addition.
  • Pour into the two greased pans and bake for 25-30 minutes.
  • While the cake is baking, in a medium sauce pan over medium heat, combine the sugar, buttermilk, butter, baking soda and vanilla. Stir.
  • Bring to a slow boil, do not stir. The icing should be the color of caramel, but not yet firm and sticky. It should be pourable. In about 5 to 7 minutes. remove from heat before it thickens.
  • Pour the icing over the warm cake, lightly spreading it around the cake.
