Ingredients
- 3/4 -1 cup rice depending on preference
- 1 large bag spinach or greens (like the big bag from Costco)
- 1 onion, diced
- 3 cloves garlic, minced
- 3 eggs
- 8 oz feta
- 1 lemon
Directions
- Cook Rice until slightly less than al dente
- In a sauté pan, cook onions till tender
- Add garlic and spinach
- In a separate bowl combine eggs, feta
- Zest the lemon rind into the bowl, then squeeze the juice into the bowl
- Once the spinach mixture has cooked, scoop a few spoonfuls into the egg and feta mixture to temper them.
- Combine all ingredients into a dish and back at 425 for 30 minutes or until the top has browned.
