Baked Spanakorizo

Ingredients
  • 3/4 -1 cup rice depending on preference
  • 1 large bag spinach or greens (like the big bag from Costco)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 eggs
  • 8 oz feta
  • 1 lemon
Directions
  • Cook Rice until slightly less than al dente
  • In a sauté pan, cook onions till tender
  • Add garlic and spinach
  • In a separate bowl combine eggs, feta
  • Zest the lemon rind into the bowl, then squeeze the juice into the bowl
  • Once the spinach mixture has cooked, scoop a few spoonfuls into the egg and feta mixture to temper them.
  • Combine all ingredients into a dish and back at 425 for 30 minutes or until the top has browned.
