Beefteki

Beefteki should be high on your list of favorite Greek foods. Unlike the traditional American hamburger, these juicy and tender beef burgers are typically served without bread. They are, however, commonly served with a combination of meat, potatoes, salad and tzatziki. Together these make an unbeatable combination of good food with family and friends.
Ingredients
  • 2 kilo ground beef and pork mixture

  • 1 large onion, minced

  • 2 eggs

  • 1 cup fine bread crumbs

  • 1 tsp. salt and pepper to taste

  • 1 teaspoon dried oregano

  • ½ teaspoon thyme

  • 1 teaspoon mint

  • 2 Tablespoon fresh minced parsley

  • Feta

  • Tomato sauce (just enough to wet the mixture.)

  • Olive oil

  • Splash of vinegar

  • Kasseri cheese, feta cheese or provolone

  • lemon

  • Yields: 6-8 oval patties

Directions
  • In a large mixing bowl add the meat mixture, bread crumbs and eggs. Mix together with clean hands.
  • Add the remaining ingredients and continue to mix until well blended.
  • Divide the meat mixture evenly into 6 or 8 balls, depending on your preference.
  • Place a sheet of heavy film wrap on counter. Begin to flatten the meat mixture into a patty. Place your favorite cheese onto the patty and fold the meat mixture in half. Fold the wrap over the top and pressing and shaping the patty into an oval patty while securing the edges.
  • Refrigerate the meat for about an hour, then remove and let rest for 10 minutes prior to cooking.
  • Grill the patties for about 5 minutes on each side.
  • Squeeze with fresh lemon juice and serve.
