Broccoli Salad

This delicious salad recipe was contributed by Dawn Anderson and can be found in the Anderson Family Cookbook. Dawn, wife of James Anderson was the son of Philip Anderson, my Grandmother Ellis’s brother. This relation makes Dawn by marriage, my father’s first cousin.
Ingredients
  • 1 bunch fresh broccoli (1 ½ lbs.)

  • 1.2 cup celery, chopped

  • ½ cup red onion, chopped

  • ½ cup raisins

  • 1 cup mayonnaise

  • (or yogurt)

  • ½ cup sugar

  • ¼ cup apple cider vinegar

  • ½ cup nuts, chopped

Directions
  • Cut of break the broccoli into small florets, discarding most of the stems.
  • Blanch and shock the broccoli for a minute or two.
  • Mix broccoli with the celery, onion, raisins and nuts.
  • In a separate bowl blend the mayonnaise with the sugar and vinegar to make the dressing.
  • Refrigerate the dressing until ready to mix the salad.
  • Toss mixture 1 ½ hours before serving.
