Buffalo-Style Chicken Wings

Bleu Cheese Dressing Dip (for chicken wings)

2 cups mayonnaise 3 Tablespoons apple cider vinegar 1/2 teaspoon dry mustard 1/2 teaspoon white pepper 1/4 teaspoon salt 8 ounces Bleu Cheese, crumbled 1/4 to 1/2 cup cold water

Combine the mayonnaise, vinegar, dry mustard, pepper and salt in a large mixing bowl and beat until well blended. Mix in the Bleu Cheese. Add enough cold water gradually to make the desired consistency, whisking constantly. Store in an airtight container in the refrigerator. Makes 3 1/2 cups.

Ingredients
  • 20-25 chicken wings
  • Vegetable oil for deep- frying
  • melted butter
  • Franks Cayenne Pepper Hot Sauce
  • Bleu Cheese Dressing
  • Celery sticks
Directions
  • Disjoint fresh chicken wings and discard the tips. Rinse and pat dry. Wings must be completely dry to fry properly since there is no batter or breading.
  • Preheat the oil in the deep fryer or large deep pan to 365˚.
  • Add the chicken wings a few at a time to the hot oil. Deep –fry for 15 minutes or until crisp and golden brown.
  • Drain well by shaking in fryer basket or strainer.
  • Continue frying wings, but do not let the oil cool as the chicken is added.
  • Blend the butter with hot sauce. A good rule to follow is: For mild wings melt 3 parts butter to 1 part hot sauce. Medium wings is 1 part butter to 2 parts hot sauce. For Hot wings it is 1 part butter to 3 parts hot sauce.
  • Shake the cooked wings in the desired sauce till coated well and serve.
  • Serve the chicken wings with Bleu Cheese Dressing and celery sticks.
