Chocolate Cream Pie

Ingredients

For the crust:

  • 24 Oreo cookies or Graham Crackers
  • 5 Tablespoons butter

For the chocolate pudding filling:

  • 1/3 cup granulated sugar
  • 2 1/2 cups whole milk (or half and half)
  • 6 large egg yolks
  • 2 Tablespoons cornstarch
  • 6 Tablespoons salted butter , chopped into pieces
  • 8 ounces good quality semi-sweet chocolate , chopped (I like Ghirardelli's)
  • 1 1/2 teaspoons vanilla extract

For the whipped topping:

  • 1 cup heavy whipping cream
  • 2 Tablespoons powdered sugar , or granulated sugar
  • 1 1/2 teaspoons vanilla extract
Directions

Crust:

  • Blend oreo cookies, combine with melted butter in a bowl
  • Mold to form pie crust in tin, bake for 10 minutes at 350 F.

Filling:

  • Cook milk and sugar till a low boil
  • Mix corn starch and egg yolks. Temper with milk.
  • Combine, heat slowly, stirring constantly
  • Add butter vanilla and chocolate, then melt

Whipped Cream (optional)

  • Place your mixing bowl and beaters in the refrigerator for 15 minutes.
  • Pour 1 cup heavy whipping cream into the chilled bowl. Add 2 tablespoons powdered sugar and 1 1/2 teaspoons vanilla extract.
  • Start whipping on low, gradually increasing to high speed until stiff peaks form.
  • When a smooth thick texture is achieved pour into pie tin and refrigerate
