Pete’s Cuddlebackville Chocolate Chip Cookies

Ingredients
  • 160 g whole wheat flour
  • 4 g baking soda
  • 1 g salt (pinch)
  • 80 g Olive oil
  • 110 g organic brown sugar Optional adjustment to your preference is 100 g brown sugar and 10 g organic cane sugar)
  • 2 organic eggs (best left out 10 – 15 minutes to reach room temperature)
  • 1.5 teaspoons organic vanilla extract
  • 16-17 oz. total chocolate chips, pecans, walnuts. (ex. 11 oz. choc. Chips, 4 oz. pecans, 1.5 oz. walnuts)
Directions
  • Pre-heat oven to 375˚F
  • Pour olive oil into mixing bowl, add the brown sugar. Mix thoroughly.
  • Add in eggs, mixing one at a time.
  • Next add the flour, baking soda and salt. Gently blend together, not over mixing.
  • Then fold in the chips and nuts.
  • Drop batter by spoonsful onto a baking sheet.
  • Bake 375˚for 17 minutes.
