I found this recipe on-line at https://www.onceuponachef.com and it became one of my favorites. I have never altered a thing about the recipe, follow the directions and you will enjoy it too.
Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 stick unsalted butter
2/3 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3 Tablespoon dark rum
2 baking apples, peeled, cored and cut into 1/2 inch cubes
( Fuji, Granny Smith apples 3-4 cups)
Confectioner’s sugar (optional)
Directions
Preheat oven to 350˚F.
Grease a 9” cake pan or spring foam pan. Line the bottom of pan with a circle of cut parchment paper and grease again.
In a small bowl, combine the flour, baking powder and salt. Set aside.
In a bowl used for an electric mixer, cream the butter and sugar until light and fluffy, about 3 minutes.
Add the eggs one at a time, beating well and scraping down the sides of bowl after each addition until blended.
Beat in the vanilla extract and the rum.
Add the dry ingredients, mixing on low speed until just combined.
Fold in the chopped apples.
Use a rubber spatula to fold the apples into the batter.
Pour the batter into the prepared pan and even the top.
Sprinkle the top of batter with 1 tablespoon of granulated sugar.
Bake the cake for about 40 minutes, until golden and crisp on the top.
Remove cake from pan and let cool. Dust with confectioner’s sugar
Serve warm or at room temperature, plain or with a light dollop of sweetened whipped cream or vanilla ice cream
