Greek Roasted Potatoes (Patate Fournou)

Ingredients
  • 4 lbs. Potatoes

  • Lemon Roasted

  • Salt

  • Black Pepper

  • Oregano

  • 1/3 cup olive oil

  • 1/3 cup fresh lemon juice

  • Tomato Roasted

  • Salt

  • Black Pepper

  • Oregano

  • 1/3 cup olive oil

  • 2 cups Tomato puree

Directions
  • Wash and peel the potatoes
  • Cut potatoes lengthwise into fourths or sixth depending on size.
  • For the lemon roasted potatoes combine them with the salt, pepper, oregano and lemon juice
  • Let them sit in the bowl for about an hour to absorb flavor.
  • Pre-heat oven to 350˚f.
  • Transfer potatoes to a roasting pan.
  • Add olive oil, dot with butter and cover with aluminum foil.
  • Bake for one hour and remove foil and continue to bake for another 30 minutes.
  • Stir potatoes carefully during cooking until they are soft and lightly browned.
  • Add a little hot water during the baking time, if necessary.
  • For the tomato roasted potatoes, pour the tomato puree over the potatoes, combine with the four remaining ingredients. Mix well.
  • Bake 40 minutes covered and 40 minutes uncovered, or until the potatoes are soft and the sauce is thick.
