Grilled Turkey Reuben Sandwich

Arthur Reuben is credited with creating the first Rueben sandwich in 1914 for film star Annette Seelos. But it was Omaha grocer Reuben Kay who made the Grilled Turkey Reuben version for his poker friends. They in turn submitted the recipe for a sandwich contest in 1955 and won. I favor the Turkey Reuben, but however, my Dad, favored the original version, with corn beef, sauerkraut and lots of 1000 Island dressing.

Description

*1000 Island Salad Dressing Recipe ½ cup mayonnaise 2 Tbsp. ketchup 1 Tbsp. white vinegar 2 tsp. sugar 2 tsp. sweet pickle relish 1 tsp. finely mince onion Salt and pepper to taste

Combine all the ingredients in a small bowl. Stir well. Cover and refrigerate several hours, stirring occasionally so that sugar dissolves. (Yields: ¾ cups)

Ingredients
  • 4 Tbsp. Thousand Island salad dressing*
  • 2 Tbsp. honey mustard
  • 3 cups, finely shredded green cabbage
  • 8 slices dark rye pumpernickel bread
  • 8 ½ oz slice Swiss cheese
  • 8 oz. smoked turkey breast
  • ¾ coleslaw
  • Butter for spreading
Directions
  • Whisk together salad dressing and honey mustard in a bowl. Season with salt and pepper.
  • Mix in the cabbage. Let stand about 30 minutes.
  • Top 4-slices of bread with one slice of Swiss cheese each.
  • Arrange turkey breast atop of cheese and top turkey with coleslaw, and second piece of Swiss cheese.
  • Cover with second piece of bread spreading half of the butter evenly over the tops of sandwich.
  • Heat a nonstick skillet to medium high heat, lightly grease the pan. Grill sandwich butter side down until crispy and the cheese is melted, about 4 minutes. Spread the remaining butter over the top side of sandwiches, flipping and cook for another 3 minutes.
  • Repeat, yields 4 sandwiches
