Hot Pepper & Feta Spread

In Greek, this spread is called Ktipiti me Piperia. At Laki’s this spread is often served alongside their delicious meals, bread, and their own homemade wine.

Description

Laki and his wife Nicki are the proprietors of this village tavern where everyone is treated like family friends. Over the years, they graciously hosted several events for us. Papou Pete’s Forty Day Memorial dinner (2015); Peter and Candace’s engagement party (2017); and an out-of-town guest dinner for Pete and Candace (2018). My brother Bill and son Anderson often say it is the place they enjoyed the most on their visit with us.

Ingredients
  • 8 oz. feta cheese
  • 2 Tablespoons olive oil
  • 1 Tablespoon red wine vinegar
  • 1-2 long green hot peppers
  • Dash of black pepper
  • 1/4 -1/2 teaspoon crushed red pepper or drops of hot sauce (optional)
Directions
  • Grill or fry the peppers in a little hot oil, until lightly brown. Seed and peel the top skin off.
  • In a food processor, pulse the feta cheese and peppers together, adding oil a little bit at a time and stopping to scrape the sides.
  • Pulse until the oil is well incorporated into the cheese, giving a smooth and soft texture.
  • Add the garlic, black pepper, and vinegar to taste, along with the optional crushed red pepper or hot sauce.
  • If the mixture is too hard, add a drop of milk to soften.
  • Cover and chill for two hours. This stays fresh for two days in the refrigerator.
  • Serve with wedges of pita, pita chips of crostini.
  • Garnish with olive oil and olive or sprinkle with crushed red pepper if used in the mixture.
  • Makes 1 cup
