Lalagia (Λαλάγγια)

Maria often prepares these delicious treats when we visit for coffee because she knows these are one of Jim’s favorites. She invites me to help her in the kitchen so I will learn the “Greek way” to prepare this popular fried dough.

A pleasant evening in Sparti is sitting on Maria’s porch enjoying coffee with the company of family.

Jimmy and Aggeliki Laskari are enjoying a cup of Greek coffee along with her mother’s Lalagia.

Ingredients
  • ½ kilo flour
  • ½ tsp. sugar
  • ½ T salt
  • 2T oil
  • 1 pkg. yeast
  • 1 ½ cup water
  • End with pastry flour
Directions
  • In a medium size bowl add warm water, dry yeast and sugar.
  • Mix well to dissolve the yeast and allow to rest 5 minutes until foamy.
  • Add ¼ cup of flour to the yeast mixture, stir and let rest 5-10 minutes. The batter should double in size.
  • Sift the remaining flour and add to a large bowl. Add the oil to the flour and mix well. Add the yeast mixture and continue to mix well.
  • More flour might be needed. The dough will be sticky and slightly wet.
  • Rub a tablespoon of oil on top of the dough and cover with a damp cloth. Let the dough rise for 1 hour, doubling in size.
  • When the dough is ready, start shaping. Take a small amount of dough, size of walnut and roll into a log 2-3 inches long.
  • When finished begin to roll the dough into a long, thin log about 6” long. Rubbing a small amount of oil on your hands can help with the rolling.
  • Twist the dough and gently drop into hot oil, fry on one side until golden brown and flip over carefully until the other side is golden brown. (2-3 minutes)
