Lamb Orzo Soup
Description
I typically make this with leftover leg of lamb made earlier.
Ingredients
Leg of lamb
1 quart stock (chicken or beef)
1 T oregano
2 cloves garlic
1 small can tomato paste
2/3 cup orzo
handful fresh Italian parsley
salt/pepper
1 med/lg onion
3 carrots
3 celery stalks
1/4 tsp mint
Directions
Sautee onions, carrots, celery, spices
Add garlic, stock, tomato paste
Cook as long as you would typically cook a soup.
Cube lamb and add to soup
~10 minutes before serving bring to light boil and add orzo
