Lamb Orzo Soup

Description

I typically make this with leftover leg of lamb made earlier.

Ingredients
  • Leg of lamb
  • 1 quart stock (chicken or beef)
  • 1 T oregano
  • 2 cloves garlic
  • 1 small can tomato paste
  • 2/3 cup orzo
  • handful fresh Italian parsley
  • salt/pepper
  • 1 med/lg onion
  • 3 carrots
  • 3 celery stalks
  • 1/4 tsp mint
Directions
  • Sautee onions, carrots, celery, spices
  • Add garlic, stock, tomato paste
  • Cook as long as you would typically cook a soup.
  • Cube lamb and add to soup
  • ~10 minutes before serving bring to light boil and add orzo
