Lemon Melt-Aways

Ingredients

First Layer

  • 1 cup butter
  • ½ cup confectionary sugar
  • 2 cups flour

2nd Layer

  • 4 eggs
  • Pinch of salt
  • 4 T flour
  • 1 tsp. baking powder
  • 6 generous Tablespoons fresh lemon juice
  • 2 cups sugar
Directions
  • Stir first three ingredients together to form a dough.
  • Press dough into 9x11” pan. Bake at 350˚for 10 minutes.
  • In a separate bowl, beat eggs, stir in remaining ingredients and pour over baked crust.
  • Bake 25 minutes.
  • Cool a little and cut into bars while still warm.
  • Dust with sifted confectionary sugar.
