Lil’s Cheese Dish

A never-fail cheese souffle people will love, I know we do.

Mom served this scrumptious cheese dish as a side with roast tenderloin of beef for Christmas Eve dinner. It soon became a part of the meal we all looked forward to. Another tradition we all looked forward to was the arrival of Santa Claus. For years, Grampa Ellis played the role of Santa, sharing a gift of laughter with all who sat on his lap. As all traditions, the honor was passed down to the next generation, Uncle Larry and eventually Grampa’s grandsons, Peter and Joey. They played the role well, laughing and teasing us all, young and old.

Ingredients
  • 12 slices stale bread
  • ½ lb. sharp cheddar cheese, shredded
  • 4 eggs, beaten
  • 2 ½ cup whole milk
  • ½ tsp. dry mustard
  • ½ minced onion
Directions
  • Grease a deep size casserole dish well with butter.
  • Remove the crusts from each slice of bread and cut into ½” cubes.
  • To the casserole dish begin layering 1/3 of the ingredients beginning with the cubed bread, then onion and finishing with the cheddar cheese.
  • In a separate bowl add the beaten eggs, milk and dry mustard. Whip together until blended.
  • Pour liquid mixture over the bread mixture and cover with lid of film wrap.
  • Let the casserole rest overnight in refrigerator.
  • Preheat oven to 350˚F
  • Bake at 350˚F for 50-60 minutes, until casserole barely wiggles in the middle.
  • Serves 8
