Maria’s Keftedakia

The love of food and sharing a meal together is universal. Maria does not speak English and I do not speak Greek, but that does not deter us from the task. Together we bake and cook laughing and enjoying each other’s company all afternoon.

Description

Maria, the daughter of George and ….Kapakos and brother to Papou (Pete). Maria and her brother Jimmy were born and grew up in Paleopanagia. She married Angelo Laskari in 1965. She moved into Angelo’s family home in Sparti where they had two daughters. The eldest daughter, Aggeliki, married her high school sweetheart Nick Kerasiotis having two children, Vaso and George. They own and operate a successful clothing store … in Sparti. The youngest daughter, Potulla, works with her sister and married Spero, who operates a photocopy and document store just south of Sparti. Aggeliki and Potula baptized Dimitris Kapakos in ΑΝΑΒΡΥΤΗ On Sundays, you will find the family together at Maria’s, sharing and enjoying dinner after they return from church services

Ingredients
  • 1 kilo ground beef
  • 1 kilo ground pork
  • 180 g fine bread crumbs
  • 4 large fresh garlic
  • Oregano
  • 9 counts salt and pepper
  • 4 eggs
  • ½ cup vinegar
  • 1 cup olive oil and a little water
Directions
  • In a large bowl combine ground beef and pork together.
  • Add to the meat mixture the remaining ingredients, mixing well.
  • The mixture should be smooth and slightly sticky.
  • Chill the meat mixture, covered for two hours.
  • Pinch off small portions of the meat mixture and roll into balls between your palms.
  • Add enough oil to a large fry pan, enough to almost cover the meatballs. Heat oil until hot.
  • Coat meatballs lightly with flour and fry in the hot oil, turning all over until brown and crisp.
