Nana Ellis’ Chocolate Cake
This is an easy, quick cake to make and no one will be disappointed. Of course, my Dad always had it with a scoop of ice cream!
Ingredients
Cake
½ cup shortening or butter
1 ¼ cup granulated sugar
2 eggs
1 teaspoon salt
2 cups flour, sifted
1 tsp. baking soda
1 tsp. vanilla
1 cup milk
2 oz. baking chocolate
Frosting
1 ¼ cup confectionary sugar
2 heaping tablespoons cocoa
1 Tbsp. shortening or butter
1 tsp. vanilla
¼ cup water, boiling
Directions
Pre-heat oven to 350˚F and grease a 9”x13” cake pan.
In a mixing bowl cream, the shortening or butter with the sugar until light and creamy.
Add eggs one at a time, mixing well.
Sift the flour and add the salt and baking soda together.
Add half the flour mixture and ½ of the milk to the sugar and egg mixture, mixing well.
Repeat with the remaining flour and milk. Add the vanilla.
Melt the 2 oz. of chocolate and add to the batter. Fold in until thoroughly incorporated.
Bake about 25 minutes.
While the cake is baking, prepare the frosting.
In a mixing bowl, add the confectionary sugar, cocoa, butter and vanilla.
When the cake has cooled, finish the frosting.
Pour in the ¼ cup boiling water and stir until smooth.
Pour and spread the frosting over the cake.
