Nana Ellis’ Chocolate Cake

This is an easy, quick cake to make and no one will be disappointed. Of course, my Dad always had it with a scoop of ice cream!
Ingredients
  • Cake
  • ½ cup shortening or butter
  • 1 ¼ cup granulated sugar
  • 2 eggs
  • 1 teaspoon salt
  • 2 cups flour, sifted
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 1 cup milk
  • 2 oz. baking chocolate
  • Frosting
  • 1 ¼ cup confectionary sugar
  • 2 heaping tablespoons cocoa
  • 1 Tbsp. shortening or butter
  • 1 tsp. vanilla
  • ¼ cup water, boiling
Directions
  • Pre-heat oven to 350˚F and grease a 9”x13” cake pan.
  • In a mixing bowl cream, the shortening or butter with the sugar until light and creamy.
  • Add eggs one at a time, mixing well.
  • Sift the flour and add the salt and baking soda together.
  • Add half the flour mixture and ½ of the milk to the sugar and egg mixture, mixing well.
  • Repeat with the remaining flour and milk. Add the vanilla.
  • Melt the 2 oz. of chocolate and add to the batter. Fold in until thoroughly incorporated.
  • Bake about 25 minutes.
  • While the cake is baking, prepare the frosting.
  • In a mixing bowl, add the confectionary sugar, cocoa, butter and vanilla.
  • When the cake has cooled, finish the frosting.
  • Pour in the ¼ cup boiling water and stir until smooth.
  • Pour and spread the frosting over the cake.
