Nana Ellis’ Swedish Spritz Cookies

Nana Ellis’ Spritz Cookies are the best! As children we were always excited Nana Ellis was visiting because she would always bring us tins of these delicious “S and O” cookies.
Ingredients
  • 1 lb. unsalted butter
  • 1 cup sugar
  • 1 egg
  • 4 cups flour
  • 2 tsp. almond extract
Directions
  • Pre-heat oven to 375˚F, bake cookies 8- 10 minutes
  • In mixing bowl cream butter and sugar until light and fluffy, about 4 minutes.
  • Add beaten egg and almond extract and mix well.
  • Add flour a cup at a time, but do not over mix.
  • Chill covered for an hour.
  • Follow the directions for using a cookie dough press to mold the dough. If you don’t have one you can use a pastry bag fitted with a star tip tube.
  • Press making “S” and “O” shapes, 1½” – 2” in length. Sprinkle lightly with sugar before baking.
