New Britain Orange Cake

Jim and I lived in New Britain, Ct. from 1983-1987, where I taught several Home Economic related courses. My favorite class was the foods class where I was introduced to this orange cake recipe by the previous teacher, Barbara. Her cake is delicious and was enjoyed by all the staff, so naturally this cake was a profitable fund raiser for the food’s classes at New Britain High School in Connecticut.
Ingredients
  • 1½ lb. plus 1 oz. Flour
  • 10 oz. shortening
  • 2½ T Baking Powder
  • 1¾ cup sugar
  • 1½ tsp. salt
  • 1¼ cup fresh orange juice
  • 5 eggs
  • ¾ cup milk
  • 1 T orange flavoring
  • Zest from 1 orange
Directions
  • Grease and lightly flour a 9”x13“ pan. Preheat oven to 325˚F.

  • In a mixing bowl, combine flour, shortening and baking powder. Mix at low speed 2 minutes. Scrape the bowl and mix 3 more minutes.

  • Add sugar, salt and orange juice. Mix 2 minutes on low speed, scrape bowl and mix 3 minutes longer.

  • Add half of the remaining ingredients: 3 eggs, ½ cup milk; mix 30 seconds, scrape down bowl; mix 1 more minute.

  • Add the remaining ingredients: 2 eggs, ¼ cup of milk and the orange flavoring.

  • Mix 1 minute; scrape down.

  • Mix 2-1/2 minutes more.

  • Pour into greased and flour pan and bake for 25 to 30 minutes.

  • Note:

  • If using loaf pans (6) 1# loaves bake at 325˚f for 40 minutes.

  • Cupcakes use a #24 scoop for 4 dozen
