Pete's Pizza

Ingredients
  • 400g water
  • 4g yeast
  • 320g all purpose flour
  • 320g 00 flour
  • 1/2 cup olive oil
Directions
  • in a large bowl combine water and yeast. Let sit for 10 minutes.
  • add flour and mix until combined
  • add oil and mix another 10 seconds
  • cover and let rest for 1 hour

  • knead for 1-2 minutes.
  • cover and put in fridge over night.

  • split into balls, slightly flatten and let raise for another hour
  • spread with your hands into the shape you want, do not use a rolling pin
