Big Lar’s Favorite Popovers

Grampa Ellis loved popovers, especially with lots of sweet butter. This recipe came from my 4-H Club cookbook. These popovers were made often when I was young, trying to perfect them and watch the smile on my Dad’s face as he enjoyed them.

Born in York Beach, Maine, Larry was the eldest of two children for his parents, Elsie Anderson Ellis and Lawrence Richard Ellis. His sister Iris Ellis Annis, a year younger and cherished her older brother. My Dad’s love of sports guided him throughout his life. The Ellis family as far back as 1911 had a reputation for basketball. He carried on the Ellis tradition playing and excelling in many sports at York High School, York YMCA and Cheshire Academy. Upon graduating from Cheshire Academy in 1940, he continued his education, majoring in Physical Education at Syracuse University. During his time at SU, he again played many sports, but it was football where he excelled. In his sophomore year, he left school to serve his country during WWII. Most of his three years were in the Pacific around Saipan with the Army Air Force Division.

Ingredients
  • 2 eggs
  • 1 cup milk
  • 1 cup flour
  • ¼ tsp. salt
  • 1 Tbsp. oil
Directions
  • Grease 6-8 glass custard cups or popover pan well with solid shortening or butter.
  • Sift the flour, re-measure and sift again with the salt.
  • Beat the eggs till foamy
  • (2 minutes), add the milk, the oil and the flour.
  • Gently mix all the ingredients until the batter is smooth but do not overbeat.
  • Pour batter into the greased custard cups ¾ full.
  • Bake at 450˚F for 15 minutes, reduce oven temperature to 350˚F, continue baking for 25 to 30 minutes.
  • Do NOT open oven door
  • Immediately remove popovers from cups.
