Ritz Cracker Pie

Ingredients
  • 3 egg whites
  • 1 cup of sugar
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2/3 cup chopped pecans
  • 16 Ritz Crackers, crushed
Directions
  • Pre-heat oven to 325˚f and lightly grease a 9” pie pan.
  • Beat egg whites until stiff.
  • Mix together the sugar and the baking powder. And gradually add it to the beaten egg whites.
  • Fold in the chopped pecans, vanilla and crushed Ritz crackers into the mixture.
  • Pour into the greased pie pan.
  • Bake for 35 minutes.
  • Beat 1 cup of whipping cream with vanilla and confectionery's sugar. Chill until ready to serve.
  • When ready to serve, pre-slice the pie and top with whip cream.
