Ritz Cracker Pie
Ingredients
3 egg whites
1 cup of sugar
1/2 teaspoon baking powder
1 teaspoon vanilla extract
2/3 cup chopped pecans
16 Ritz Crackers, crushed
Directions
Pre-heat oven to 325˚f and lightly grease a 9” pie pan.
Beat egg whites until stiff.
Mix together the sugar and the baking powder. And gradually add it to the beaten egg whites.
Fold in the chopped pecans, vanilla and crushed Ritz crackers into the mixture.
Pour into the greased pie pan.
Bake for 35 minutes.
Beat 1 cup of whipping cream with vanilla and confectionery's sugar. Chill until ready to serve.
When ready to serve, pre-slice the pie and top with whip cream.
