Rum Cookies
Ingredients
1 cup vanilla wafers
1 cup confectioner sugar, sifted
1 1/2 cup finely chopped pecans
2 Tbsp. Cocoa
2 Tbsp. light corn syrup
1/4 cup rum or favorite liqueur
Granulated sugar, sifted
Bitter chocolate bar, grated
Directions
Finely chop the vanilla wafer cookies.
Finely chop the pecans and sift to remove large piece
Combine the first four ingredients .
Add the corn syrup and rum to the dough and mix well.
Make into small balls.
Finely grate bittersweet chocolate and mix with 1/2 cup sifted granulated sugar. Set aside.
Roll the balls into the finely grated bitter chocolate
Store the Rum balls in refrigerator.
