Rum Cookies

Ingredients
  • 1 cup vanilla wafers
  • 1 cup confectioner sugar, sifted
  • 1 1/2 cup finely chopped pecans
  • 2 Tbsp. Cocoa
  • 2 Tbsp. light corn syrup
  • 1/4 cup rum or favorite liqueur
  • Granulated sugar, sifted
  • Bitter chocolate bar, grated
Directions
  • Finely chop the vanilla wafer cookies.
  • Finely chop the pecans and sift to remove large piece
  • Combine the first four ingredients .
  • Add the corn syrup and rum to the dough and mix well.
  • Make into small balls.
  • Finely grate bittersweet chocolate and mix with 1/2 cup sifted granulated sugar. Set aside.
  • Roll the balls into the finely grated bitter chocolate
  • Store the Rum balls in refrigerator.
