Spinach and Rice (Spanakorizo)

Spanakorizo is considered to be a classic Vegetarian dish which can be served as a side dish or entress when served with feta and Greek bread. Σπανακόρυζο
Ingredients
  • 1 pound fresh or 10 ounces of thawed and squeezed frozen spinach
  • 1/2 heaping cup of uncooked white Carolina rice
  • 3-4 sliced scallions
  • 1 leek, sliced
  • 1/2 cup Olive oil
  • 1 Tablespoon tomato paste or 1 freshly chopped tomatoes to coat
  • Fresh Mint or Dill to taste
  • Salt and pepper to taste
  • water
  • Freshly squeezed lemon juice
  • Feta cheese
Directions
  • Drain the spinach, free of excess water.
  • In a medium sauce pan add oil and sauté the scallions and leek until wilted.
  • Add the tomato paste or chopped tomatoes and stir until the oil is golden in color.
  • Add the spinach.
  • Pour enough water to cover spinach.
  • Add the desired spices, boil the water and then add the rice.
  • Cover the pat with a lid and cook on medium low until rice cooks tender.
  • When ready to serve squeeze fresh lemon over the spanakorizo and sprinkle with feta cheese and dash of olive oil for extra flavor.
