Spanakorizo is considered to be a classic Vegetarian dish which can be served as a side dish or entress when served with feta and Greek bread. Σπανακόρυζο
Ingredients
1 pound fresh or 10 ounces of thawed and squeezed frozen spinach
1/2 heaping cup of uncooked white Carolina rice
3-4 sliced scallions
1 leek, sliced
1/2 cup Olive oil
1 Tablespoon tomato paste or 1 freshly chopped tomatoes to coat
Fresh Mint or Dill to taste
Salt and pepper to taste
water
Freshly squeezed lemon juice
Feta cheese
Directions
Drain the spinach, free of excess water.
In a medium sauce pan add oil and sauté the scallions and leek until wilted.
Add the tomato paste or chopped tomatoes and stir until the oil is golden in color.
Add the spinach.
Pour enough water to cover spinach.
Add the desired spices, boil the water and then add the rice.
Cover the pat with a lid and cook on medium low until rice cooks tender.
When ready to serve squeeze fresh lemon over the spanakorizo and sprinkle with feta cheese and dash of olive oil for extra flavor.
