Spinach Pie
Ingredients
1 1/2 6 pounds frozen Spinach, thawed and squeezed dry
2 large Eggs
1 1/2 pounds Ricotta cheese
1 pound crumbled Feta cheese
2-3 bunches Green onions, finely chopped
5 ounces Onions, finely chopped or1 large leek (white and pale green only) , thinly sliced
Salt and black pepper
2/3 cup chopped fresh Dill
1 Tablespoon Mint
3 1/2 ounce Olive oil
Flour
2 packages filo dough
Directions
Pre-heat oven to 375
Remember to squeeze thawed spinach well, preceding to directions.
Combine ingredients in a large bowl.
Season with salt and peer and set aside.
Unwrap phyllo sheets and stack on table. PLAVE A 15X10X2-INCH BAKINGPAN.
Lightly grease pan with oil or melted butter.
Place 2 phyllo sheets in bottom of prepared pan. Brush with oil or melted butter.
Repeat layering process 4 more times, brushing every other sheet with oil, forming a total of 10 stacked sheets.
Spread the spinach mixture on top of phyllo stack.
Repeat layering process with the remaining phyllo, brushing every other sheet with oil or melted butter.
Score pie into squares or triangles, lightly sprinkle drops of water over the top before baking.
Bake until golden brown, about45 minutes.
Cool slightly
