Spinach Pie

Ingredients
  • 1 1/2 6 pounds frozen Spinach, thawed and squeezed dry
  • 2 large Eggs
  • 1 1/2 pounds Ricotta cheese
  • 1 pound crumbled Feta cheese
  • 2-3 bunches Green onions, finely chopped
  • 5 ounces Onions, finely chopped or1 large leek (white and pale green only) , thinly sliced
  • Salt and black pepper
  • 2/3 cup chopped fresh Dill
  • 1 Tablespoon Mint
  • 3 1/2 ounce Olive oil
  • Flour
  • 2 packages filo dough
Directions
  • Pre-heat oven to 375
  • Remember to squeeze thawed spinach well, preceding to directions.
  • Combine ingredients in a large bowl.
  • Season with salt and peer and set aside.
  • Unwrap phyllo sheets and stack on table. PLAVE A 15X10X2-INCH BAKINGPAN.
  • Lightly grease pan with oil or melted butter.
  • Place 2 phyllo sheets in bottom of prepared pan. Brush with oil or melted butter.
  • Repeat layering process 4 more times, brushing every other sheet with oil, forming a total of 10 stacked sheets.
  • Spread the spinach mixture on top of phyllo stack.
  • Repeat layering process with the remaining phyllo, brushing every other sheet with oil or melted butter.
  • Score pie into squares or triangles, lightly sprinkle drops of water over the top before baking.
  • Bake until golden brown, about45 minutes.
  • Cool slightly
