Vasilekee’s Meatballs

Vasilekee’s meatballs are another delicious family recipe. She is the sister of Kosta Tzimopolous and lives with her husband, Nicko in the family village of ____. They grow most of their own vegetables and herbs in their garden. Vasilekee makes her own bread, weaves her own blankets and rugs, and welcomes the neighbors to morning coffee as they walk by her house, enjoying the mountain view.
Ingredients
  • 1 kilo ground beef
  • 1 kilo ground pork
  • 2 teaspoons salt and black pepper
  • 1/4 cup Olive oil
  • 2 thick slices of bread of heavy sour dough
  • 2 eggs
  • 2 Tablespoons fresh parsley, chopped
  • 2 red onions, grated
  • 1 Tablespoons dried oregano
  • 1 Tablespoon vinegar
  • Oil for frying
Directions
  • Add all ingredients into a large bowl and mix well for about 15 minutes.
  • Cover the bowl with plastic wrap and let rest in the refrigerator for at least 1 hour until chilled.
  • To form the meatballs, roll the mixture into balls, the size of walnuts.
  • Dredge lightly each meatball in flour, until well covered.
  • Transfer to a plate, shaking of excess flour.
  • To fry the meatballs use a large skillet and pour in the oil to a depth of 1/2 inch. Heat the oil over medium-high heat until it begins to ripple.
  • Add the meatballs in batches in a single layer and fry for about 7 minutes, turning occasionally until browned and crisp on all sides.
  • Use a slotted spoon to remove the meatballs to a plate lined with paper.
